Sarah's Elderflower cordial

Collect about 25 big elderflower heads (shake out any insects!)
Dissolve 1.5 kg sugar in 1.5 lires of water in a pan
in a big bowl place
Zest or thin peel of 3 lemons then slice lemons and add to bowl
50g citric acid (from a chemist)
Elderflowers
Sugar syrup

Cover bowl wih a cloth and leave overnight in a cool place.

Next day, sterilise 3 bottles by heating in an oven and when you can handle them, strain the cordial into bottles.
It should last till next year.  Delicious!

 

Elderflower fritters

Heat a large pan of vegetable oil

Mix together 

  100 g self-raising flour

  2tsp corn flour

  2tsp caster sugar

And mix together

   1 egg

   175 ml of sparking water

Pour the wet mixture slowly into the middle of the flour mix and whisk until combined.

Dip elderflowers into the batter mix and drop into the vegetable oil. Cook until golden (approx 1 min) and then remove to a plate covered with kitchen paper. Dust with icing sugar, mint, lavender or whatever takes your fancy and EAT immediately.
